Into a deep stock-pot, pour about a 1/2 cup of Extra-Virgin, Italian Olive Oil and toss in half a roughly chopped onion -- cook on high until onion is turning dark golden -- at the edges. Then, add a TBSP of crushed red pepper, about two cups (all of a super-market-bought live Plants-of-Basil -- leaves chopped coarsely), and a third of a cup of fresh Oregano leaves -- or more. After they all begin to wilt well, add four VERY LARGE, PRESSED cloves of garlic, and stir constantly for about a minute until garlic begins to turn golden. Quickly add two cans (all contents), of peeled Roma Tomatoes -- that have been pureed in a blender -- about a TBSP of salt, and as much freshly-ground Black Pepper -- and a serious pinch of sugar. Stir semi-constantly (whenever boiling), and when it comes to a rolling boil, turn off and let cool. RE-HEAT to a boil, and cut heat off and let cool COMPLETELY before refrigerating or freezing. Will keep for several months in the freezer!!!
