Perhaps I should say that yesterday being the last COLD winter day before we zoom into the 70s for a week -- tomorrow -- CHRISTMAS (today, it is in-between), I roasted a six-pound turkey breast, but googled and found a recipe for HERB-ROASTED Turkey Breast, an easy mix to make. I DOUBLED the measure of thyme, oregano, and rosemary -- what one does when substituting FRESH HERBS (which grow year-round in pots on my deck here in Wilmington, NC).
The herbed pan-juices made a HEAVENLY GRAVY!!!
I ALSO found a recipe for BUTTERMILK MASHED POTATOES -- since the leftover buttermilk in my fridge couldn't last much longer (from battering some oysters to fry, two weeks ago). ALL one has to do is to switch it in for the milk in your fave way of making mashed potatoes, but I did that FULLY -- which might be too rich for many people. Try using HALF OF EACH, instead -- and if you smoke POT, you will pig-out on it EITHER WAY!!!
For CHRISTMAS COLOR, I also had Jellied Cranberry Sauce with Berries (from a can), and Steamed Broccoli Vinaigrette!!!
And TODAY, I realized I had missed the CBS broadcast of the 2021 Kennedy Center Honors.
